Truffle experience with Pavel Sapík.

Come and taste our chef's specialties that enrich black and white truffles for flavouring, with carefully prepared selected dishes. The menu prepared for this evening will be complemented by exceptional, prestigious wines from Chateau Escot in Bordeaux. This pairing will delight not only lovers of haute cuisine, but anyone who enjoys fine food and a fine dining experience.

The truffle, a rare species of mushroom, grows underground, usually near the roots of a deciduous tree. Truffles are specially prepared for this evening by one of the best suppliers on the Czech market, Markéta Hrubá, her company Truffles by Markéta. She imports fresh truffles primarily from the Marche region of Italy, the Acqualagna region, which is seeking UNESCO listing precisely because of its long tradition of truffle harvesting. It is a beautiful area 40km from the east coast of Italy.

Since Sumerian times, truffles have been considered the most refined gourmet speciality for several millennia. Even one of the most famous chefs and gourmets, Jean Anthelme Brillat-Savarin, in his gastronomic masterpiece, The Physiology of Taste, did not hesitate to declare them to be the true 'diamond of cuisine' as early as 1825.

Both black and rare white truffles will be on the menu. The main difference is in colour and taste. The black truffle has a more intense flavour with hints of nuts and mushrooms, while the white truffle has a more delicate and delicate flavour.

You can enjoy, for example, the starter, a delicious veal milk tartare with ricotta and truffle pearls or the main course of halibut on fennel salad with mashed Grenadille potatoes with fresh white truffle and mushroom jus
