St. Martin’s Goose

There's no goose like a goose. Our St. Martin's Day goose by Pavel Sapík will surely delight you!

From 8th to 13th November we have prepared a special menu for St. Martin's goose lovers. And you really have something to look forward to. Our chef's menu will include terrine, traditional, honest "Kaldoun" soup or two goose preparations, South Bohemian goose confit with red cabbage or Slovak goose confit with white sauerkraut. 

The St. Martin's goose is definitely accompanied by red wine, which you can choose from our exquisite wine list or our sommelier will fine-tune the selection according to your special requirements. Among the Moravian wines, we recommend Pinot Noir "Apri" 2021, Thaya from Znojmo or Beaune 1er Cru "Les Teurons" 2018, Philippe Bouzereau from Burgundy. 

We carefully select all our suppliers for you. The geese from the Hungarian farm in Oroshaza are specially fed and have a larger layer of meat. The fat cover ensures that the roasted goose is beautifully tender and juicy. The owners of the farm have been rearing geese and ducks for more than 30 years.

And why do geese belong on St Martin's Day? Legend has it that St Martin, in his modesty, did not want to accept the rank of Bishop of Tours and hid from the envoys who brought him the news of his election in a goose house among a flock of geese. But they betrayed him with their strong cackling. Another version, however, says that the geese so disturbed Martin during his sermon by their quacking that he condemned them to pay for their misdeeds on the brazier on the day of his memorial.
