The centerpiece of our St. Martin's Day offering is the goose itself, roasted to a golden perfection, its skin delightfully crisp. Within, it is stuffed with a melody of ingredients that have been the cornerstone of this dish for ages. The goose is then served with a collection of side dishes that evoke the essence of the season: smooth potato dumplings, slowly simmered red cabbage, and a vibrant array of roasted vegetables.
